Allulose (D-Psicose) is a low-calorie sugar that is naturally found in small amounts in wheat, figs, and raisins. It is an epimer of fructose, meaning that it has the same chemical formula but a slightly different structure. It tastes almost as sweet as sucrose (table sugar), but has only 10% of the calories. It can be used as a sugar substitute in various foods and beverages, such as baked goods, dairy products, confectionery, chewing gum, and soft drinks. It does not affect blood glucose or insulin levels and does not cause dental cavities. It has been approved by the FDA and the EU as a safe and versatile sweetener.
